View Full Version : My yummy, cheap, easy, from scratch lunch!!

Forgive my ignorance, but I never knew how easy it is to make tomato soup! Have the rest of you been making this for years? Wow!
I grew up with the canned kind and I never, ever liked it. The soup I made today was nothing like that stuff!

I sauteed a little onion with some celery, added a spoonful of flour, then poured in a can of crushed tomatoes. I let that simmer for awhile, adjusted seasonings, then added a generous handful of chopped cilantro. Lastly, I swirled around a couple of tablespoons of cream. It was so good! Even my finicky "I don't like tomatoes" kid enjoyed it. I served it with toasted cheddar cheese sandwiches. Yuuuuummmmmmmmmyyyyyyyy!

I had no idea either :) Thanks for sharing, we love soup around here, especially for lunch. Our current favorite is egg drop soup, but we put some pasta in ours to make it more satisfying. We will have to try this one this week!

Ooooooh, that does look good. A little too hoity-toity for lunchtime with a bunch o'kids. But I think the sherry would add a very nice depth of flavor. Mmmmmmm.

That would also be really good with the cheesy bread from Elise's site.

But I have definitely converted!:D I tried to get my sister to convert also, telling her how cheap, easy(not too much longer than the canned king) and delicious it is. But she just won't believe me, her loss I guess!
