History:
Id highly recommend you get a copy of So Proudly We Hail...Keystones of American Freedom. It contains a lot of original source material: Mayflower Compact; Declaration of Independence; Northwest Ordinance; first person narratives, as well as beautiful watercolors by Kay Smith. Curiously, it doesn't have the Constitution, but you should definitely have your kids read that, too. You can probably find it on the Web. So Proudly We Hail.. is out of print, but Amazon.com has several copies available.
Also check out the Wallbuilders website. They have a lot of materials available. I especially recommend their DVDs, which are short and could easily be inserted into the appropriate points of your curriculum.
I Was Born a Slave is another book I highly recommend. It contains several first person narratives from former slaves. There are 3 volumes, but I'd suggest just selecting a few of the narratives for your kids to read.

For literature, I think you should include The Grapes of Wrath.

Other than that, I think your ideas look great. Good luck!
