you use? How does it work? Do you use their curriculum or yours?

Are you looking for a "600" school or one where you can still officially be a homeschooler? Makes a difference for dual-enrollment procedure & if you want to be able to take classes/sports at the ps.

about either. Would it be possible to have my choice of curriculum for math?

A 600 school is legally a private school, that you are a satellite of. HomeLife Academy (http://www.homelifeacademy.com/) is one. Some have curriculum requirements, others require nothing but your 180 day log. Some do the whole hs transcript thing, others don't. The down side to a 600 is that the county sees you as a private schooler, not homeschooler so they don't have to (by law) allow you to join their teams or classes. Also, not all allow outside courses (like cc or FLVS) & the paperwork w/either can be a bit more complicated. The plus is that you only report to the school, not the county school board, and the possibility of an official school transcript.
Have you looked at the FPEA (http://www.fpea.com/) site? They explain all that in much more detail, plus you can find support groups & 600's in your area.
There's a couple of Non-600's that leave you legally a homeschooler--NARS (http://narsonline.com/) & Crossroads Christian (http://www.crossroadschristianschool.com/) for example, but they do the transcript. NARS allows you to pick your curriculum--don't know re: Crossroads.
