I was reading my March issue of Prevention magazine and came across an article about Resistant Starches. I'd never heard this term before, but I was thrilled to learn that some starchy foods can actually promote weight loss and have other health benefits as well. The trick is eating things like potatoes cold (not raw).

I hope this is good news for someone else today! (I also hope this doesn't turn out to be some kind of dieting myth...but for now this "Starch Girl" is happy to believe it!)
