View Full Version : What can I do with the boneless, skinless chicken breasts in my freezer?

It is slick, icy and snowy here and I haven't planned ahead. About the only meat I have that doesn't take hours to cook is the chicken breasts. Any ideas on what I can do with them for supper??? Thank you!

Dh is not big on fried chicken, but he loves mine, partly because I use boneless skinless breasts. You could make fried chicken, mashed potatoes, and some kind of veggie.

Chicken pot pie is one of my kids' favorites. For a quick chicken pot pie mix cooked, cubed chicken with mixed veggies (frozen or canned) and cream of chicken soup. Bake in a pre-made or homemade crust. You could also dump the mixture into an empty casserole dish, top with mashed potatoes and bake.

I love to make chicken kiev or stir fried veggies with chicken. There are a zillion different things you can do with boneless skinless breasts.

pour some creamy Italian dressing over them and back. YUM.

I just coat it in Italian bread crumbs, saute it in the frying pan in olive oil, cook for maybe 10 minutes, then take spaghetti sauce and pour it around the chicken and let it cook until the chicken is done. Serve with a salad and some garlic bread or breadsticks and you've got supper. HTH!

Alton Brown had a great recipe for garlic chicken cooked in a skillet and then transferred to the oven to finish up. He did a whole chicken, but we've done it w/ 4 breasts. I think it's 1/4 cup olive oil, 4 chicken breasts, 10-15 garlic cloves, some herbs of choice (basil is good). Brown chicken on both sides and then transfer to a 350 deg. oven to cook for about an hr. The olive oil +roasted garlic makes a great "sauce' over the chicken. Use the roasted garlic to spread on toast as a side dish.

Mix black beans, salsa and corn together, pour over chicken and bake.

Great with rice, salad, pasta, over potatoes. Whatever starches you up.

I've never tried this with frozen chicken breasts (think I would thaw them in the microwave first), but I used to call this my "fail-safe" recipe because it always turns out. Combine a container of sour cream (not giant container, but regular size) with a can of golden mushroom soup (regular mushroom is okay, but golden mushroom is better) and as much chopped parsley as you like (I usually put in a whole bunch of tops cut up with scissors). Sprinkle with paprika, if you have it. Cover and bake at 350 for one hour. Serve over white rice.

I made a Thai peanut butter sauce to go over some chicken breasts earlier in the week. I cubed them to look like stir fry, but just added some of the sauce at the end of cooking and had more to spoon over them and couscous. You could use rice or just vegis, instead. It might not work if you don't have most of the ingredients:

3 tblsp creamy peanut butter (crunchy would work, too)
4 tblsp olive or vegetable oil
4 tblsp soy sauce
recipe calls for 4 tblsp sugar, but I reduce and use Splenda, or leave out altogether
4 tsp rice wine vinegar or white vinegar
1 tsp sesame oil (but I think you can get by leaving this one out)
pinch of cayenne pepper

It's yummy!

with any kind of canned something you have in your pantry (cream of soup, diced tomatoes, salad dressing). add whatever vegetables you have on hand.
