I am not a cook! And my family must eat. With us moving next week I will have to cook for my dh. I have a few simple things that I can put together but that's it.:)

Beef Stew

1-2 lb beef stew meat
1 can sliced carrots
1 can sweet peas
1 large can diced potatoes
1 can golden mushroom soup
1 can cream of celery soup (I used cream of mushroom 'cause my dh loathes celery!)
1 can tomato soup
1 pkg Lipton onion soup mix
3 cans water

Stir everything together, set crockpot on high, and let cook for 5 hours.

I serve this over rice with fresh baked bread. Yummy!!

BBQ Chicken Legs

One layer of legs in the CP, pour on your favorite BBQ sauce to coat. Continue layers until you put all the chicken in. Cook on low for 6-8 hours or high for 3 - 5. Serve with rice. Kids and adults all love this.

Italian chicken

Frozen boneless, skinless chicken parts
1 block of cream cheese
1 can of cream of mushroom soup
1 packet of italian dressing mix

Place all the chicken in the CP. Soften cheese and then mix with soup and dressing. Pour over chicken. Cook on low 6-8 hours or high for 3-5.
Serve over rice or noodles.

I've altered this one and used beef instead and it turned out fantastic... kind of like stroganoff. I've also used french onion soup mix instead of the italian dressing and it turned out really good.

1 roast
1 can pepsi/coke/dr.pepper (NOT DIET)
1 packet onion soup mix

This makes the BEST roast beef, very tender and flavorful. Don't use diet soda; the sugar is what makes the meat tender and aspartame is toxic at high heat levels.

I just posted this recipe (http://www.homeschoolblogger.com/PreschoolersandPeace/476066/)...

We like it a lot-- enough to keep cans of cranberry in the pantry year around :)

in our crockpot. My family's favorites are chili, and meat with a can of soup dumped on top (roast beef w/cr. of mushroom and a packet of dry onion soup, or chicken with can of cheese soup on top, etc.)

Tuscan Style Beans

1 TBSP EVOO
3 oz pancetta, chopped (or bacon)
1 lge red onion, chopped
4 cloves garlic, minced
2 sprigs fresh rosemary (or 1 tsp dried)
1/4 cup parsley leaves (use fresh)
1/2 tsp salt
1/2 tsp black pepper
28 oz can diced tomatoes
2 - 19 oz cans cannellini beans, rinsed and drained

Over medium high heat, saute pancetta in oil until just begins to brown. Transfer to CP. Add onion to skillet; saute until softened. Add garlic, rosemary, parsley, salt, pepper. Saute for 1 minute. Stir in tomatoes and bring to boil. Cook for 2 minutes. (Can stop at this point and refrigerate overnight.)

Add beans to crock pot. Pour tomato mixture over beans. Stir. Add just enough water to cover. Cover and cook on low for 8-10 hours or high for 4-5 hours. (If you don't want to do in the CP, let sauce simmer on stove for 20-30 minutes. Add beans and simmer another 20 minutes to heat through.)

CRANBERRY PORK ROAST

1 3-4 lb boneless or loin pork roast
1 can whole berry cranberry sauce
1/8 tsp nutmeg
1/4 cup honey
1/8 tsp ground cloves
salt and pepper to taste

Sprinkle roast with salt and pepper. Place in CP. Combime remaining ingredients and pour over roast. Cover and cook on low 8 - 10 hours or until roast is tender. You can thicken the sauce a little with flour or cornstarch if you want at very end.

It's a surprisingly good and fast:

6-8 chicken breast halves
1 jar salsa

low 6-8 hours.

We have it over rice.
