I noticed that alot of people here seem to use the Human Odyssey. Why is that version preferred to the Western Civilization that SWB suggests? What are the differences.

When we did Omnibus I and II, Western Civilization was the recommended text, which I bought (and still own). However, my oldest was in 9th grade and my middle daughter was in 7th grade. The three of us did Omnibus together, while my youngest worked through Story of the World. At any rate, although my older two girls are excellent readers, I could tell that my middle daughter struggled a little bit with the readings. Plus, I found that I wanted a printed version of study materials; most of the materials for Western Civilization in terms of review and sample tests were all online. Overall, it just seemed like World History would be a better fit for us. Western Civilization is still an excellent text. Now, recently I thought I saw someone post that there was a study guide (printed) available for Western Civilization, but I think you'd have to check the publisher's website for that.
