Curried Chickpeas: I serve it with basmati rice and usually vegetable samosas or onion bhaji.
Black-bean Burritos: I cook the black beans with onions and salsa and just a tiny bit of garlic, then roll that up in tortillas with some corn niblets and cooked rice. My husband likes these lightly grilled, and he tops them with more salsa and some sour cream.
Nachos: The same black bean mixture I put in burritos, but served "do-it-yourself" style, with chopped onions and lettuce and tomato and tortilla chips.
Pasta with tomato sauce: Boring, but my son's favorite.
Pitas with hummus and couscous and chopped veggies.
Baked potatoes with assorted toppings. I usually serve corn on the cob or glazed carrots or some other veggie alongside.
Sloppy lentils: Kind of like sloppy joes, but made with a seasoned lentil mixture. I serve it over toasted hamburger buns and with a veggie (mashed yams usually go over big) on the side.Those are the most popular meals around here. I hope it'll be enough to get you started.

Here's one of my family's favorite meatless recipes: Black Bean Tortilla Casserole (http://allrecipes.com/Recipe/Black-Bean-Tortilla-Casserole/Detail.aspx). It's easy to make too. Instead of their toppings, I serve with guacamole and sour cream on the side.

Forgot to add that I tried a Moosewood Cookbook, but dh didn't like the recipes in there. I think he said they were tasteless.

they that can whip up delicious meals without needing a recipe! (Am I correct on this?)

Do you have recipes -- or do you just add a bit of this and add a bit of that?

I stink at the add this add that with no recipe, btw.

I need specifics! We've been eating more and more vegetarian in the last while!

I was a vegetarian turned vegan for 7 years, so I'm enjoying returning to what I used to do in the kitchen!
