Our dinner last night might be a great start for you. We had leg of lamb, ceaser salad, pumpkin (recipe from SOTW 3 AG), buttermilk biscuits, and for Easter I'd add in sweet potatoes.

For the leg of lamp I preheated the oven to 450. I covered the lamp with cracked pepercorn, rosemary, and crushed garlic. Literally I didn't measure any of it, I just covered the outside of the lamp in the order I listed the items. I did that while the oven was preheating.
The lamb was placed on a rack (I used a cookie cooling rack) and then placed onto a 7x11" pan to catch all the drippings.
The lamb went into the oven at 450. 15 minutes later I reduced the temperature to 375, and cooked the lamb for 20 minutes per pound or until the internal temperature got to 155. Then I removed the lamb from the oven, covered it for 20 minutes with al foil while we cooked the rolls.

It was delicious and rather easy. Do not cover the lamb while it is cooking in the oven. And no basting either.
