We had a leg of lamb last night for dinner. I was thinking of making lamb soup with the leftovers. Anyone have a great recipe? We also low-carb it here so there can't be potatoes, corn or beans in the pot.

Just saute the lamb (chopped fine) as if it were uncooked, then follow the rest of the recipe. This looks like a good version:

oh now I would love that but the rest of the family dislikes aubergines, and they would be impossible to find in our stores right now. Great thing to make this summer though when my eggplants are growing wonderfully.

when we do, we make a big salad, slice up the lamb and put it on top. Yum!

Lamb curry! Cook it up with chopped apple Serve over rice with chutney, peanuts, raisins, hard boilded eggs and bacon.
