I have quite a few leftover boiled potatoes and I dont know what to do with them.
Suggestions??

That's exactly what I was going to say!!!
Or you could mash them up with an egg, a little flour, and some onion to make potato pancakes.
Or you could make potato salad.

Make a pot of New England clam chowder, smash the potatoes up and use them as thickening for the soup.
Although I'd really be tempted to fry them up with onions and a few eggs and have a breakfast feast.
OR, you could fry them up, mix in some ham and have ham-hash-browns for lunch or dinner.

Make Lefse. :p Yummmmmm! It is a Norwegian flat bread that my grandma used to make once a year. Boy do I miss it and her. :)

Mix together some milk, flour and a cheese you like (goat or feta work well).
Slice potatoes. Pour milk and cheese mixture over potatoes and bake.
Can also add salt, pepper and nutmeg if you like.
