....then thawed them and served them....could I refreeze any leftovers, or is the freezing a one-time deal?
Also, are there any ingredients that might be in different bar recipes that don't thaw well after freezing?
Thanks!

Each time you freeze something it degrades the quality of the product. So, technically you can refreeze just about anything........it just isn't going to taste as good as the original product, no way around that.
As for some things that freeze better than others.........I have found coconut has a funky texture once frozen.....especially if it isn't wrapped well, too much moisture. Other cookie type ingredients should do fine though.

Why don't you cut it into bars so they can freeze individually, allowing you to use just what you need...

....of pans for a shower I'm throwing for my nephew. Then I HAVE to thaw all of them to serve. I'm just concerned that there's going to be lots of leftovers. It'd be great if I could refreeze them for company or something like that in the future.
I haven't had any problems with refreezing bars and cookies. It's possible that they could get a little drier, but it is certainly worth trying.
