I like Total Health (Choices for a winning lifestyle). It covers all the usual health topics but doesn't overly dwell on drugs & such.
We used it for high school & I liked all the components. My dd read the text, did the vocab pgs, did some of the activity worksheets, & took the chapter tests.
If you only have a semester, the teacher's manual has a grid showing how to use it for 1 vs. 2 semesters. You could also just read thru the text & discuss topics.
I have also heard that Hewitt has a syllabus that combines Total Health with I Kissed Dating Goodbye, along with assignments.
And Health is easy to just design yourself. Dd did a study of each nutrient one year. Fitness study is also valuable & can be done on your own.

DD also used Total Health along with the first half of Prescriptives for Nutritional Health (a book about natural health and remedies written by an MD and nutritionist).

My girls did Alpha Omega. Read a section; fill in some blanks; take a test. It was a quick way to jump through the hoop of having "health" on the transcript. They have and are learning health and nutrition from just living life in this family. :)

Thanks for the suggestions! I'll be looking into them.
Pam, we are just jumping through a hoop with this course too.
You can also add in various safety classes (hunting, boating, the "don't drink & drive" class req. here to get your permit, etc.) along w/the Red Cross First Aid/CPR classes.
