What are your favorite 1-volume resources for:
Nursery Rhymes/Mother Goose?
Fairy Tales?
Aesop's Fables?
Bible Stories?
Greek/Roman Myths?
I'd really appreciate some recs, especially for nursery rhymes/Mother Goose and Fairy Tales. We'd like traditional versions of these, along with beautiful (and traditional) illustrations. THANKS!

My favorite nursery rhyme books...
Richard Scarry's Best Mother Goose Ever (In fact, my 2.5 year old son thinks it's the best book of any kind ever. He hasn't let me read him ANYTHING else for about 6 months. If I try, he just shrieks, "GOOSIES!!!" until I start up with Little Boy Blue.)

For one with fewer rhymes but INCREDIBLE illustrations, Favorite Nursery Rhymes from Mother Goose by Scott Gustafson
http://www.amazon.com/Favorite-Nursery-Rhymes-Mother-Goose/dp/0867130970/ref=sr_1_2?ie=UTF8&s=books&qid=1228442429&sr=1-2
Fairy Tale favorites...
Classic Fairy Tales by Scott Gustafson
http://www.amazon.com/Classic-Fairy-Tales-Scott-Gustafson/dp/086713089X/ref=sr_1_1?ie=UTF8&s=books&qid=1228442429&sr=1-1
Also, The Golden Book of Fairy Tales is wonderful, but for slightly older children. I started the Gustafson book at 3 with my kids. I could see the benefit of waiting until around 5 or so with the Golden Books volume.

Scott Gustafson's art from the two books named above can be seen here.

Favorite Aesop's Fables
We love the Milo Winter one, Aesop for Children
http://www.amazon.com/Aesop-Children/dp/0026890224/ref=sr_oe_2_1?ie=UTF8&s=books&qid=1228443016&sr=1-2
It's good because it seems to have the most fables and good illustrations. It is ALWAYS available in hardback for 9.95 at the Bargain Books section of our local Barnes and Noble so I would try there since it's out of stock at Amazon...has been ever since I first bought mine quite a while back.
Our favorite Aesop for illustrations is The McElderry Book of Aesop's Fables by Michael Morpurgo.

I haven't found a perfect Bible stories book. I have D'Aulaire to use for Greek myths and Geraldine McCaughrean's Roman Myths. I'm happy with the former but the latter has illustrations that are too cartoony for my taste. I can't buy them all though, so I'll stick with it.
I'll be interested in seeing the other responses.

For Greek Myths. the D'Aulaire book.
I second the Aesop by Milo Winter.
I also second the fairy tales by Scott Gustafson-- love them! It doesn't have everything, but it has many of the classics. I supplement by checking out illustrated fairy tales from the library. Paul Zelinsky is one good one I remember in particular.
The Mother Goose we like is by Iona Opie and Rosemary Wells.
Tomie de Paola has a nice Bible story book that uses the actual text of the NIV, but I guess I wouldn't call the illustrations traditional, but not too cartoonish, either.

Thank you, ladies!
We do have the Scott Gustafson Classic Fairy Tales, which we enjoy, so I'll probably get the SG Nursery Rhymes to go along with it.
I'm also liking the looks of "A Treasury of Children's Literature," edited by Armand Eisen. It seems to have a great selection of tales, poetry, fables.

Well, I'm off to check out the Aesop recommendations! Thanks!

The Original Mother Goose by Blanche Fisher Wright (http://www.amazon.com/Original-Mother-Blanche-Fisher-Wright/dp/1561381136/ref=sr_1_6?ie=UTF8&s=books&qid=1228482167&sr=1-6) is the one on our coffee table. I'm not sure how it compares to the rest, but I love the illustrations.
