I usually chunk mine and make a stew. Or a stroganoff. Both are yummy!

Beef pot pie would be our first choice. You could also shred it and toss on some BBQ sauce and make sandwhiches.

Beef tacos, enchiladas, or chimichangas (sp?).

Add BBQ sauce & serve on rolls.

Beef stroganoff

Served over rice

So many possibilities.

Baked potatoes stuffed w/ all the fixings and shredded roast in gravy. It's actually very,very good. A restaurant around here calls it Pot Roast Patootie :).

Chopc it up and stir fry it with minced onion, and use it as a stuffing for soft tacos.

I got this from someone on this board.....it is soooooo good. I do increase the roast to 2 cups.
Vegetable Beef soup

2 (or more) large potatoes, peeled and chopped
1 medium or large onion, chopped
1 stalk celery, chopped
carrots, peeled and chopped (as many as you like)
1/2 cup chopped cabbage
1 cup cooked brown beans
1 small can of tomato sauce or fresh tomatoes, seeded and cooked down (Can you tell Grandma kept a big garden?)
1 cup cooked beef roast, shredded
1 cup beef broth
2 tsp salt
1 tsp sugar
Water

Pul all roast beef in food processor. Process until in very small pieces. Place in bowl. Add a little salt, a little relish and some miracle whip--enough to hold it together. Even my kids love this!!

It's classically made with lamb, but I've done it with left over beef or turkey and it was fine. Just chop the meat small and saute according to the recipe as if it were fresh meat.

If I want leftover roast I need to make two to begin with ;) But stroganov is one of my favorites when I manage to have some to use... Or meat pierogies! Mmmmmmmmmmm......
