Do you plan on sending your dc to any summer lessons, like swimming, horseback riding, daycamp for Scouts, or sports camps? You obviously would schedule your school time around those days, cutting them out completely if needed.
4 school days per week means you need to do 45 weeks per year if your state is particular about you maintaining the 180 days. Depending on your state, a library day could be considered a school day or not.
That leaves you 7 weeks off throughout the year. Two for Christmas, one for Thanksgiving, one during the spring to enjoy the good weather and get the garden set up is our standard around here, and that leaves us three weeks to spread out over the school year, using however we choose, in case of illness or a family trip, or mental health days.
If my kids finish a subject for the year before our "official" school year is up, then they are done until the next term. This means that when my dd finishes math this year in June, she doesn't have to crack a math text until mid-August. Yes, I will slip some math in on her with puzzles, games, and cooking, but she can kiss Saxon goodbye for two whole months, and that's one less thing we have to schedule.
Science is pretty much done for us during the summer. We plant a garden (and fruit trees this year!), the kids catch bugs, we camp out and look at the stars, they check out books from the library about wildflowers and butterflies and frogs. No pre-set plan or curriculum, just get out there and play.
We don't do much formal grammar anyway, but I might ask the kids to tell or write me a story once a week, or they might write a letter to grandma. I do plan to spend this summer implementing art and music appreciation into our lessons, because we often drop subjects during the summer, so it seems like a good time to pick up something we have been neglecting.
Mainly I use the summer to finish stuff we got behind on through the year, and then to do fun stuff to keep up the dc's skills, like reading The Cat in the Hat in latin, or reading something history-related out loud.

We do 4 days a week year round. We take 2 weeks off in May or June and 2 to 3 weeks off at Christmas.
Generally about every 3 to 6 weeks around a holiday that shortens the school week I schedule a fun school week where we drop our normal stuff and do lapbooks, games, whatever.
It has worked well for us and if we have to we can take off a week here and there as needed.:)
