I just found the perfect book at the library. It's called "Artisan Bread in 5 Minutes a Day".
I checked it out from the library & it really lives up to its name. And Wow! The bread is delicious! This explains how to make wet bread doughs that don't have to be kneaded and it is almost as easy as using a bread maker (and maybe even better tasting). I've made Baguettes, Ciabatta, & Semolina Bread & they've come out wonderfully.
A regular bread pan will work for the traditional loaves. You do have to have a baking stone for the free form loaves. One of the things I've learned is using steam while baking the bread in the oven. The crusts have just been fabulous. I highly recommend seeing if your library has it. If you like to bake bread already, it probably would be worth buying the book outright. The main drawback is it is too delicious for my waistline. :p
