Anyone done a Roots and Shoots program for a co-op?

We are starting up a co-op in the fall for our support group and I am toying with the idea of offering a Roots and Shoots program. Has anyone done this? I like the concept very much, but am not clear on how one goes about actually implementing it in a classroom sort of situation.
