View Full Version : Bread Baker's, using maple syrup in bread

I know there are some bread bakers here who make delicious bread for their families.

I bought a big jar of freshly jarred maple syrup (jarred yesterday, down the street from my house) and I would like to try to use it in bread. I could use some good basic bread recipes too. Can anyone help?

I think you could just use it in place of honey, which is what I use.

I haven't been able to much lately, but I did today. I made 3 loaves and 1 is almost gone. I found a great honey whole wheat recipe from the Doughmakers cookbook. It makes 3 loaves of very moist hearty bread. I will see if I can attach the recipe here. I use a bread dough improver from King Arthur's flour. It has improved the taste and speeds up the rising time. If this attachment doesn't work, let me know if you want me to email it to you. Ok, I just tried it and it won't work. It is a photocopy form the book. Well, let me know if you want it. I have given loaves as gifts for people and they are very well received!

1.5 cups of water
2 cups of bread or all purpose flour
1 cup of whole wheat
2 t of raw honey or 2 t of maple syrup
1 t of salt
fennel seeds - optional
caraway seeds - optional (use as many as you like) - would start with 1 t each
2 t yeast

Knead well - let rise until doubled
Shape on baking stone or put in loaf pan.
Bake at F400 for about 27-30 minutes

If you are using a bread machine, put ingredients into pan and let it mix on dough cycle, then bake in oven.

Another great thing to do with maple syrup is to heat it up on the stove, and then pour it over vanilla bean ice cream. Or, even better, over cinnamon ice cream if you can find it.

An old and beloved trick I learned from the original Ben and Jerry's, in Burlington, Vt.

Drizzle the maple syrup over bread or cakes just as they come out of the oven; that way the flavour won't be lost in the bread. It is gorgeous on apple cakes or a nice moist tea bread with raisins in.

I agree with Lorna. I've used maple syrup several times in bread (no special recipe, just using it in place of honey), and the flavor gets totally lost. If you want a yummy maple flavor, you might google "maple butter" or "maple spread" and making a spread for the bread.

And yes, maple syrup on excellent quality ice cream is a beautiful thing. :)
