*sigh*
I have nothing thawed. I have no fresh veggies except onion, celery, and lettuce. Oh, and sweet potatoes. I think I have some leftover ham in there.
Oh, it's no use. We'll just eat . . . I don't know. Rice. People who complain won't be allowed to put soy sauce on it.

Could you try making Thai rice wraps with what you have on hand? I always go for breakfast if nothing else is topping my list. You are all welcome over here for veggie lasagna & garlic bread.

In our house, sweet potatoes ARE a meal. Seriously. I love them.
Do you have eggs to go with the ham? Makings for pancakes or pizza? Those are my emergency meals.

LOL, well, with ham and sweet potatoes, you could add some spices and make a stew of sorts. Or use the potatoes with chicken, if you have any (doesn't have to be thawed, it will cook quickly once in a broth) and spices to make an Indian or African inspired stew. Onion and celery would go well in any of these concoctions. You could have a salad on the side. Serve the stew over the rice.....

Oh, you could also do the water thawing method. I use that frequently (a little too frequently, ahem!), and most things thaw pretty quickly.

You've had some good suggestions here already. If I were you, I'd likely make sweet potato hashbrowns. Dice the potatoes (might want to bake them a bit first) and saute with onion and olive oil. Add in some diced ham and you're good to go.:)

Ahh...the joys of a 12 yo dd who desparately loves to eat before 9:00 p.m. :) I just say, "DD, what do you think about cooking "this thing that I really don't feel like cooking but would like to eat?" Tonight she's making pizza from scratch. Love her!!
