View Full Version : Need recipe quick! (breakfast casserole)

I have some teens coming to my home early in the morning and I'd like to bake a breakfast casserole to serve to them when they arrive. I have milk, eggs, pork sausage, cheddar cheese, and onions. Surely there's a recipe I can use with these ingredients?! Please share if you have one.

Do you have grits or cornmeal?

(My aunt just gave me this recipe a week ago. What good timing. I am not Suzie, nor is my aunt... I wish I could give whoever she is proper credit!)

Suzie's make ahead breakfast casserole
Serves 6

oil a 9x13 2 inch deep pan
2 1/2 cups dice size bread chunks
1-2 lbs browned sausage or cooked bacon
1-2 cups grated cheese

6 eggs
2 cups milk
1 tsp mustard
salt & pepper
*

Scatter the bread in the pan.
Sprinkle with crumbled sausage or bacon and cheese.

Beat together remaining ingredients and pour over bread, etc.
Cover and store overnight in the fridge, or seal and freeze.

Bake at 350 for 35-40 minutes OR at 300 90 minutes.

* optional 1 10 0z can of mushroom soup or 1 1/2 C sliced mushrooms.

Normally, I do have grits on hand. Unfortunately, though, I'm still operating under lame duck conditions (onging renovations with a kitchen less than operational) and I'm fresh out! :-}

This recipe is similar to the one I have on my file. Unfortunately, I chunked my dry mustard in the move 'cause it was out of date and I have yet to replace it. :-{

This is the one I've made before. Easy to make ahead and pop in the oven next morning. I never used the mushroom soup in mine though.

Ok - I just ad libbed and it came out great (at least the 3 teens who ate it said it did in addition to my own opinion!) ;-D Thanks for the help, ladies. I browned the country sausage and layered that, crumbled, over a bed of frozen potatoes followed by shredded cheddar cheese and chopped onion. Then, I whisked 9 eggs, salt, pepper, and 3 cups of milk and poured that over the whole shebang. I baked at 350 degrees for 45 mins and served it with fresh grapes and OJ. Delicious! I really need to do this more often. :-)
