I'm come to the realization that the only vegetables my kids eat are green beans and salad. Most of the time I give them fruit with supper. So please share your favorite vegetable recipes and maybe I can broaden their palates!

BAKED ASPARAGUS WITH BALSAMIC BUTTER SAUCE (http://allrecipes.com/Recipe/Baked-Asparagus-with-Balsamic-Butter-Sauce/Detail.aspx)
INGREDIENTS (Nutrition (http://allrecipes.com/Recipe/Baked-Asparagus-with-Balsamic-Butter-Sauce/Detail.aspx#nutri-box))
1 bunch fresh asparagus, trimmed
cooking spray
salt and pepper to taste
2 tablespoons butter
1 tablespoon soy sauce
1 teaspoon balsamic vinegar
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Arrange the asparagus on a baking sheet. Coat with cooking spray, and season with salt and pepper.
Bake asparagus 12 minutes in the preheated oven, or until tender.
Melt the butter in a saucepan over medium heat. Remove from heat, and stir in soy sauce and balsamic vinegar. Pour over the baked asparagus to serve.

We do the same thing with broccoli. I chop up the head of broccoli, spray it with cooking spray, toss it in kosher salt and bake it for 7-8 minutes at 400 degrees. it's really delicious.

A few of our favorites are:
Saute zucchini and/or yellow crooked neck squash, onion, and garlic in olive oil until tender (we use a lot of garlic in this one). If we have Parmesan cheese we sprinkle it on top after lightly cooked.

Same recipe as above, but with broccoli instead of squash.

Asian Green Beans:
fresh beans trimmed to size, and lightly steamed (al dente)
6 cloves garlic, minced
2 T olive oil
2 T soy sauce
Saute garlic in oil until done and smelling yummy, stir in beans and sprinkle soy sauce over the top. Cook lightly until flavors blend. Enjoy!

Steam baby carrots (or sliced large ones) until tender, but not overcooked. Stir in butter and dill. Serve as-is. Enjoy!

You could try this:
The Best Soup in the World (Serves about 6)
Ingredients
2 tsp olive oil
1 large onion, chopped
4 cardamom pods, bruised
2 tsp ground coriander
1 tsp garam masala
½ tsp chilli powder (or to your taste)
6 curry leaves
2 large carrots, chopped
2 large potatoes, chopped
100g button mushrooms, chopped
1 litre vegetable stock
425g tin diced tomatoes
2 tbsp lemon juice
½ cup (125ml) coconut milk
½ cup frozen peas
Method
Heat oil in large pan, cook onions and cardamom, stirring until onion is browned lightly.
Add ground spices, curry leaves, carrots, potatoes, mushrooms, stock and tinned tomatoes. Boil, then immediately simmer, uncovered for about 15 mins, or until vegies are tender.
Add juice and coconut mils, then simmer uncovered for 10 mins. Add peas and simmer for a further 3 mins. If possible, remove curry leaves and cardamom pods.
Also, do the kids like soup? You can soupify practically anything. Parsnip and pear soup doesn't sound nearly as good as it is. Roast capsicum and tomato soup is good too!

We often eat:
steamed broccoli
steamed carrots
green beans, minced garlic, a little butter, salt and pepper with sliced almonds (making it right now to go with salad and baked potatoes with diced chicken, cheese and salsa).
broccoli casserole
we eat most of our veggies in soup -- we eat soup a lot
we eat raw carrots and celery with peanut butter when we have sandwiches

Cheesy Baked Cauliflower II
Prep Time: 10 Minutes Cook Time: 45 Minutes Ready In: 55 Minutes
Yields: 8 servings
"A simple cauliflower, tomato, and cheese bake - a delightful side dish."
INGREDIENTS:
1 large head cauliflower, cut into florets
salt and pepper to taste
2 medium tomatoes, sliced
1/2 cup butter, melted
8 ounces Swiss cheese, shredded
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Place cauliflower in a microwave-safe baking dish with just enough water to cover bottom of dish. Cook in the microwave on High for 5 minutes, or until slightly tender. Drain, and season with salt and pepper. (We don't do this step as we like our cauliflower with a little crunch.)
3. Arrange tomato slices around the cauliflower. Drizzle cauliflower and tomatoes evenly with melted butter, and top with cheese.
4. Bake 40 minutes in the preheated oven, until cheese is bubbly.
Normally DH and DS won't eat cauliflower, but cooked this way they will. I think it definitely has something to do with the cheese. I usually add a little and can be different cheeses.

I got this idea from Milovany (Darla) who didn't give me a recipe; I just remember the dish from a meal we shared, and I tried to re-create it. I served it last night and it was a big hit with my guests...but only one of my children liked it. Boohoo. I think it's delicious!
Veggie Strata (I just made that name up)
Layer a glass baking dish with:
hard squash (acorn, butternut, etc)
then
sliced Roma tomatoes
then
sliced sweet onions
Drizzle with olive oil (not much), shake on some garlic powder, top with cheese (I like good old cheddar). Bake at 350 until tender.
