Which do you recommend and why? We have a lot of car time this year and I want to make the most of it. Comments and recommendations on any other portable, hand held math drill devices also welcome. TIA!

Math Shark is fine, Flashmaster is amazing. If you have the money, get the Flashmaster. It has more tools, more customizations, the ability for you to press a button and see how they did. It's just so customizable with lessons, times, etc. When we were doing the Math Shark, I would tell her a time to spend on it, and she would. With the Flashmaster, the play is bundled in sessions so she knows when she's done enough (do 3 sets of addition at level such and such). If you're in the car and KNOW they're playing, it won't be as big a deal. Still, having owned both, I prefer the Flashmaster. Terribly pricey at $50 (ouch), but you'll appreciate the added features. I resisted for a year, not liking the color, the visuals, fearing it was too complicated, blah blah. Just get it. :)
BTW, someone suggested giving them beans or pennies to fill a jar and earn a prize for each round they complete on the Flashmaster. It works really well for that, and you can also do bonuses (double beans for subtraction, hehe). Imagine my dd's shock when she realized she could earn MORE BEANS doing the Flashmaster diligently than spending much longer sessions on her math pages, for which she also earned beans! Several days she'd do 25 rounds on the double beans operation on Flashmaster trying to fill that jar, hehe! Did I mention how much our fact speed has improved recently? ;)
I'm interested in opinions on this as well. I tend to think Flashmaster is better because it has more features and looks more grownup than the Shark. But I have not used either one.

We have the Flashmaster. I like all the features. I'm not good w/electronic devices but it's pretty easy to figure out. I like being able to see exactly what the boys did and what % they got correct. We've never used any of the other ones, so I can't compare. Flashmaster does have a 90-day money back guarantee. I'll be using it for 3 kids so the $50 doesn't bother me that much.

Isn't Flashmaster just multiplication tables? I need ds to memorize addition and subtraction.

No, the flashmaster covers all the operations, including fractions and decimals according to my dd. (I'm too lazy to check.)
