Sausage Potato Soup
1 lb. ground pork sausage - I use Jimmy Dean regular
1 large yellow onion, chopped
1 (14-oz) can chicken broth
1 can dark beer (Fat Tire or Heineken)
16 oz. (that's half of a bag) shredded frozen hash browns (no need to thaw)
1 can cream of celery soup
1 can cream of chicken soup
2 cups whole milk (okay, you can use 2%, but whole is yummier)
2 cups finely shredded cheddar, divided use
Brown the sausage and onion in soup pot. Drain and return to pot. Add chicken broth, beer, and shredded hash brown potatoes. Bring to a boil, cover, reduce heat, and simmer for 30 minutes. Stir in soups and milk. Simmer a bit more, stirring often. Add 1 cup finely shredded cheddar stirring until it melts. Serve soup piping hot and pass additional cheddar for sprinkling on top.
