I need something to use as a side-dish with chicken, mixed steamed vegetables, and crescent rolls. Any recipes?

When I want more flavor, I just cook white rice in chicken stock and add chopped scallions when the rice has finished cooking.

In 2 T olive oil saute:
1/2 chopped onion
1/2 ground coriander
1 bouillon cube
1.2 c bell pepper(I use red)
1/4 t ground cumin
Then add:
4 c broth
3/4 t oregano
2 c Basmati rice
2 medium chopped tomatoes
Bring to boil then cover and cook as usual.

Someone brought over Jasmine rice and it was tasty. It went great with mixed vegetables. She said it was something like Uncle Ben's. You just microwave it for a minute and it's done. YUM!

I ended up dissolving two chicken bouillon cubes in boiling water, along with a tablespoon of butter. I added some thyme withthe rice and let it steam for awhile. It was pretty good.
I put bullion, curry, tomatoes or other things for flavored rice.

In a heavy pan, saute 1 chopped, white onion in 4 T of butter until it is translucent. Add one minced clove of garlic and saute briefly, then stir in 1 cup of long-grain white rice. Saute until the rice turns color from translucent to dead white. Pour in 2 cups of hot chicken broth (I used Bovril), bring to boiling, cover, and simmer for 20 minutes.
This is so, so good. So reliable. You can make one recipe or 5 and it always comes out great.
For variety you can stir in 1/3 cup of grated Parmesan cheese (the cheap kind in the green can works fine for this) before serving.
This is good with or without gravy.
