I just made these banana oat muffins (http://allrecipes.com/Recipe/Banana-Oat-Muffins/Detail.aspx). I think you could substitute applesauce for the banana.

I know, I know. Not what you asked. But a perfect way to get rid of those two over ripe bananas that may be sitting on your counter eventually.

These are my dc's absolute favorite muffin. I've substituted pears and it's just as good. Be careful, though, because the pears are can be jucier and you may need to adjust.

Apple Muffins

4 tbs. soft butter
1/4 C. brown sugar
1/2 C. white sugar
1 egg
1 C. buttermilk
1 3/4 C. flour (I mill soft white)
4 1/2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
1 lg. apple, peeled and cut into small chunks (I double this)
1/3 C. brown sugar

Cream together butter and sugars until fluffy. Add egg. Fold in buttermilk. Mix all dry ingredients in separate bowl and add to wet mixture. Fold in apples. Fill well-greased muffin tins and sprinkle with extra brown sugar on top. (I leave out the extra brown sugar topping to save calories.)

Bake at 400 for 15 minutes.

Delicious!

Here's my recipe for Apple-Oat muffins.

1 cup rolled oats
1 cup buttermilk
-----combine & let stand 30 minutes

1 cup flour
1/2 tsp. salt
1/2 tsp. baking soda
1+1/2 tsp. baking powder
1-2 tsp. cinnamon
-----stir until blended, set aside

1/2 cup butter, melted
1/2 cup brown sugar
1 egg, beated
1 large apple, peeled & grated
-----add to oat mixture & mix well

Stir dry ingredients into oat mixture until just blended. Bake ~25 minutes at 350F.

These are Yummy!!!! If you have no apples, leave out the cinnamon & apple & we call them Porridge Muffins.
