My son just turned 7 and is starting Spanish this year. He's at a 3rd/4th grade level in most of his school work. Should I start him on Latin this year, along with Spanish? Or, should I hold off another year and just let the Spanish soak in. One thing I don't want to do is overload him, because though he's advanced, he still is "just seven". What do you recommend. Is there any reason I need to start Latin this year??

No, there's no reason you have to start Latin this year :) No reason at all!
Wait until you and he are both ready, and you feel he won't be overloaded. You will not miss any benefits by waiting a bit.

You can if you want to. We've always done Spanish, starting when ds was just a baby listening to Spanish music. We added in Latin when he was about your son's age. There's no confusion. We get a big kick out of saying we're trilingual (yeah, right!)
Of course there's no harm in waiting, if that's what you'd rather do. But there's also no harm in starting if you want to. There are several simple programs available for younger kids.
