Is this even the right area for this?
I am 5 weeks into this new diet for my ds8, and the results are amazing! We have had 1.5 major meltdowns in the last 5 weeks instead of 2 every week! I never even knew his stomach hurt until he told me a few weeks ago! He also told me he has more energy! This is good motivation which I need. I feel like kicking something most of the time because each and every meal is labor instinsive and takes 30 minutes or more to make and involves lots of dishes. He HATES oatmeal and that really is tradical. Although we are having a great time with new recipes I am one of those "can of cream of mushroom soup and tons of cheese" cooking people.
Is there any convenience food out there besides applesauce, cornflakes and raisins? My biggest concern is the family reunion where we are flying to UT (5 hours on peanuts anyone??) and staying at someones house. I am aiming for 2 out of 3 meals but I still see myself making chicken salad or pasta salad everyday instead of chatting with Grams! And then there is the Disney trip...
Any tips for grab and go? Thanks!

I hear ya! Congratulations on starting the diet and making the commitment to do what it takes. But you are right, it's a pain in the pot.:001_smile:
Here are some of my ideas, take em with a grain of GFCF salt;):
Uncle Ben's Brown Rice--10 minute instant type
GFCF hot cereals from Bob's Red Mill -- cook in microwave or on stove
Brown Cream of Rice (Lundgren's? Lundberg's? it's in a green box)--tastes good and takes a minute to cook in microwave
Potatoes and sweet potatoes from the microwave
frozen vegetables in microwave
apples, celery with peanut butter
raw nuts, seeds from the bag
air popped popcorn (we sprinkle ours with corn oil and salt for a movie taste)
carrots and other raw veggies with hummus or bean dip
tuna salad (make sure both tuna and mayo is GFCF) wrapped up in a big lettuce leaf
GFCF deli meats rolled up and dipped in whatever you like
Scrambled eggs: extra yummy with cut-up hot dogs stirred into them while cooking
GFCF refried beans from a can; serve with salsa in a GFCF corn tortilla
GFCF canned soup (read labels, call companies to check)
soy yogurt cups (if your ds tolerates soy--also read label)
stir-fry meats or tofu and vegs. (doesn't take too long)
GFCF hotdogs & skillet hamburgers (make a gluten free bun from a mix if buns are a must)
Go the allergygrocer.com. They sell a lot of GFCFconvenience foods & mixes that are traditional kid faves, though they aren't cheap.
Also take a look at the book Special Diets for Special Kids by Lisa Lewis or any of the other gluten-free books out there. There are also several gluten-free companies that sell quick foods, as it's becoming a market niche.:001_smile:

So glad to hear you are having success with the diet. Congratulations!
Here are some of the meals my son likes:
Breakfast - scrambled eggs, bacon, gf toast or
cereal (Rice Chex and Malt-O-Meal Fruity Dinobytes are gfcf) and turkey sausage. Sometimes I make pancakes for a treat. The Kinnikinnick mix is excellent and we like Bob's Red Mill as well when we can't get Kinnikinnick
Lunch - applegate hot dogs or hormel naturals lunchmeat (both are nitrate-free) or leftovers from dinner with some combination of a fruit and a starch such as applesauce, peaches, tortilla chips, potato chips, rice, baked potato, leftover mashed potatoes
Dinner - Meat, veggie and a starch.
Rotisserie chicken
grilled chicken
chicken kabobs
spagetti with rice pasta
pork tenderloin
hamburgers
tacos (minus cheese and sour cream)
bbq pork chops
ham steaks
marinated flank steak
honey-garlic chicken stir fry or other stir fry
mashed potatoes
ribs
Roasted turkey
rice, rice and more rice
fried rice
baked sweet potatoes with butter (Earth Balance is awesome!!) and brown
sugar
baked potatoes
french fries
Chicken nuggets with Miss Roben's breading/batter mix
potato salad
devilled eggs
baked beans
mashed potatoes
jello
cranberry sauce
The Cravings Place cornbread
whatever veggies I can get him to eat
Ian's makes a gf/cf kid's frozen dinner which my son really likes for a treat
Outback Steakhouse has a gluten free menu
Burger King has gluten free french fries
There is controversy over the McD's french fries, but we use them without any problems
For milk, we use either rice milk (chocolate is a favorite) or Vance's Darifree
I use the Gluten-free Pantry's french bread mix as a cup for cup replacement in making cookies
Glutino makes some really good nutrigrain type bars
Snacks:
Buttered Popcorn (earth balance margarine)
Kettle corn (I have the Whirlypop from Williams Sonoma and make this at home)
marshmallows
bananas
raisins
grapes
fruit leathers
dried pineapple
corn cakes (like rice cakes)
banana chips
Rice krispy treats made with Malt-o-meal Fruity Dynobytes
Rice dream ice cream bars
Purely Decadent coconut milk ice cream
There is lots of candy that is gluten free/casein free as well
Most of the mixes that I use come from the health food store. We have a number of small health food stores around here that specialize in carrying gluten free foods.

Oh, I didn't see that you were going to Disney. They are wonderful. Call ahead and they will give you a list of all the gfcf foods in the park.
