Do you have any avocado? I seem to recall watching an Alton Brown/Food Network show that you can sub in avocados for eggs.

Eggs, Whole -- Use 2 tablespoons water + 2 tablespoons of flour + ½ tablespoon of Crisco + ½ teaspoon of baking powder.

Im pretty sure you can use apple sauce to sub eggs...but I can double check.

I checked...and yes, you can use apple sauce....I would think 2 TBS of apple sauce would do the trick.

I have heard of ground flax as a substitue for eggs.
1 egg equals 1 tablespoon ground flax plus two or three tablespoons water Mix well.

It does not raise as well but with the other two eggs you should be OK.

Thanks! I made it with a little applesauce and ground flax seed (which I always use in baking).

It came out delicious!

Okay, so we ended up with the monstrously large zucchini, so I finally peeled them the other day, composted the seedy section, and shredded the rest. I then placed two cups worth of shredded zucchini into little ziploc bags and froze. It was so easy -- you don't even have to blanch it first or drain the thawed zucchini. Just thaw in the ziploc bag and throw into the mixing bowl.

Today, I made two loaves. I added some chocolate chips to one batch.

This is the recipe I used. I run my nuts (I used pecans b/c that's what I had) through my little food processor first. I add nuts to all muffins, sweet breads, pancakes and waffles. This grinding makes them more accepted my family members.

I also threw in about 3 heaping tablespoons of ground flaxseed. I used a little less sugar, and next time I will actually half it.
