I've done stuff like that before, and I feel like such a doofus.

OK. I'm sitting down. I'm breathing deeply. I'm keeping an open, yet grossed-out mind. I still think maybe I don't get this. I don't get why Ellie says below that she feels like a doofus. And I don't get why this thread is of interest to rabid horse type people. So, I'm really, really out of it.
Can you explain very clearly, in very simple language what part of what animal is shown in those pictures, and exactly what who does with it?

I am not a horse person. I am not a cow (bull? steer?) person. We don't have things like that (the thing you're holding, and skinning, and cleaning, and eating) in the city!
Thanks for widening my horizons! I would have never believed it if I hadn't seen it with my own eyes.

Aren't they the products of the castration of the steers? What does Ree talk about all the time? But hers are smaller, because they're from calves. And this is the first bona-fide report I've had of someone cooking them. I didn't know if it was really true, or just some story to scare people.
Maybe it's both!!
