My blueberry pies are always soupy, even the one I made with cornstarch. What am I doing wrong?

I think the directions for perfect fruit pies are on it's box.

If that doesn't work, Pomona pectin (mail order) has recipes for firming up pie. It's good stuff.

Hm... I use 1lb (or a little more, if I have another partially used bag) of frozen blueberries, and a lb or a little more of fresh berries. Put the frozen berries in a saucepan, stir in 3-4 rounded tablespoons of corn starch, and just a little water to cover the bottom of the pan. Heat to a simmer, and add sugar to taste. (If you want it to be thicker, use confectioner's/powdered sugar instead of granulated.) Continue to stir and simmer until the mixture has begun to thicken and readily coats a spoon. Don't stop cooking too soon! When it's ready, remove from heat, and stir in the fresh blueberries. (1lb is a minimum -- you can definitely use more!) Allow the mixture to sit for a few minutes before pouring into the pie crust and baking.

Thanks, I just ordered the pectin so I will give that a go as well. Dh loves blueberry pie so I am on a quest to make the best one ever.:)

I'm going to try this one tonight since I haven't got the other ingredients suggested yet. Thanks. I may have not cooked my last pie's ingredients long enough and iirc I don't think I used that much cornstarch.

I made one for hubby yesterday. The recipe called for a couple tablespoons of flour. Ok, I used it. And a tablespoon of cornstarch...and a tablespoon of tapioca.

This is the first pie EVER that is NOT runny. ;)
