Need picnic food ideas

We go to the state park (it has a lake and places for hiking) most weekends now. We have been having the same stuff for the most part...pbj sandwiches, lunch meat sandwiches, and when we are really up for an adventure, we grill hot dogs and handburgers. We prefer not to grill as it is so hit out right now so no one wants to hang over a grill. Besides, we can grill at home.

SO...any picnic food ideas that might spice up our picnic this weekend? Thanks!

Pasta salad with veggies and grilled diced chicken.

Tortilla roll-ups (spread w/flavored cream cheese and top w/veggies and/or lunchmeat.)

Cold fried (or oven fried) chicken

Dips (hummus, cheese dip, blt dip)
