I need to buy more bread pans. I have one unglazed stoneware that works fabulously. I have heard about steel bread pans so I am interested.
What do you use and love besides Teflon/nonstick?

recently.....since I've been using the No-Knead Bread recipe (which, if interested I can post) - I've been using a heart-shaped LeCrueset pot with lid. Gives the bread a great crisp crust! Dh LOVES this bread (good-bye dreams of ever owning a breadmaker!!)
But other than that - I've used PC stoneware & metal bread pans.

I was given their muffin pans for Christmas and love them. When I need a bread pan, I will purchase one from there. Right now I am using a Chantal bread pan that works fine. I just have to really butter the pan beforehand.

...the pizza or baking stone by Pampered Chef. I think this type of stone is available by other distributors as well, however PC has the loaf pans as well.
Nothing burns and bread comes out great every time.

I have the best luck with it. I use the "Artisan Bread in 5 minutes a Day" recipes and bake bread almost daily.
Not so good luck with metal pans - the sides always come out undercooked, but maybe I haven't experimented enough with pans.

For Christmas one year my sister bought me some of the dimpled Norpro bread pans, and I really love them.
She ordered them from www.breadbeckers.com. I'm not sure there's a photo of them on the Breadbeckers site; you may have to google Norpro bread pans to see them.

I've had them for 15 years and they just get better with time. I get raves about by crusts. I really like the Pain de Mie pan.

When I make bread, it's 4 or 5 loaves at a time, using my Bosch. I cannot imagine spending such big bucks on pottery:eek:
Long ago, a friend had some that had vertical lines/valleys/indentations/something on hers, so that when her bread was done, she could slice it right on those lines. The pans were not *dimpled,* you understand. Sadly, she moved to France before I became interested in bread baking and Bosch, so I was never able to ask her where she got those very kewl pans.

That is what I do, too. But I am considering it because that one stoneware loaf pan makes the biggest best loaf. I have one metal pan that is not great and the rest are free form.

and I love them. I got the longest bread pan so the loaves are really like double the normal size. The bread raises great and releases fantastic. Never underbaked.
I also got them from breadbakers at ICHE conference.

Could you post the recipe for Artisan Bread in 5 min a Day? Never heard of it. Suppose I could google it as well.
