I've googled and googled and did find some scope and sequences for this textbook series, but how to pick a level? Can anyone link me to a site with some examples of their pages?
Do you get yours from the manufacturer? Used?

I was just coming here to ask if anyone had sample pages for this too. Hopefully someone will be able to point us in the right direction. By the way, where did you find the scope and sequence?

Google harcourt science scope sequence

and you will find many schools with various grades of S and S up.

I just use the grade level they are supposed to be in.
I have books for grades 3 through 6 and the material gets progressively harder as you go up in grade.

I don't know where there are sample pages though. But I can tell you that I found the workbooks to be of no practical use at all.

I got my student texts used on Amazon last year for a good price. I really enjoyed using them and so did my kids. Not sure where to find samples.

You could try ebay. I found 1st and 2nd grade textbooks on there for about $5 each. I would second the opinion about the workbooks. I ordered new ones direct from Harcourt and they really aren't helpful. It was just too much busy work.
