If you just wanted to use this for history but not literature, would you only need the guides? Also, would this work for an average to slow reader/learner? Cathy Duffy says it's challenging, but I'm wondering what she means by this. Is the reading level very challenging?

Read that post and hopefully it will help. The guides would be all that you would need if you aren't doing the lit (which would be easy to cut out although my dd loved the recommended books.) It was a bit "easy" for my very strong reader so I think it would be great for you.
