It's too hot for soup here, but once it cools down I make this one often. It's so easy.
1 bag frozen cauliflower
1 bag frozen broccoli
1 bag shredded carrots
1 small onion chopped
1 of those boxes of chicken broth (I'm not sure how many ounces it is)
1 can Rotel tomatoes
4 oz Velveeta Light cut in chunks
Combine everything but the Velveeta in a pan, bring to a boil, cover and cook for about an hour. Add Velveeta and stir until melted.
1 cup = 1 point

It's not from a WW cookbook, actually Pampered Chef, however I worked out the points to be 6 pts. for one serving. I think there are about 4-6 servings. If you use wheat noodles, you get that extra fiber to keep you fuller longer.
Curly Pasta Chicken Toss
This tastes great the next day without heating! Perfect for delivering!
1 package (8 oz.) fusili pasta
2 tbsp. Cornstach
½ tsp. Salt
1 can (10 ½ oz.) condensed chicken broth
1 lemon
2 lg. Carrots
1 med. Red bell pepper
1 lb. Boneless chicken breasts
2 tsp. Vegetable oil, divided
2 garlic cloves pressed
2 cups broccoli or fresh green beans
2 tbsp. Fresh snipped basil leaves
1 oz. Fresh Parmesan cheese, grated (about ¼ cup)
Cook pasta according to package directions. Drain and keep warm. I drizzle olive oil all over it into the pan to keep it from sticking to itself and then cover it up.
2. Meanwhile combine cornstarch and salt in small bowl. Whisk in chicken broth. Zest one lemon and add to broth mixture. If you don’t have a zester, use a peeler and chop up the lemon peel really fine. Slice carrots. Slice pepper into think strips.
3. Cut chicken into one inch strips. Heat 1 teaspoon of the oil in stir fry skillet over med-high heat. Press garlic into skillet. Add chicken. Stir fry for about 5 minutes. Don’t overcook the chicken. It gets really dry and ruins it! Remove from skillet and heat up remaining oil. Add carrots; stir fry for 2 minutes. Add green beans and bell pepper; stir fry for 2-3 minutes until veggies are crisp-tender.
4. Add broth mixture and browned chicken. Bring to a boil; reduce heat to medium and cook until mixture is slightly thickened, stirring occasionally. Remove from heat. Stir in fusilli and basil. Serve immediately. Dress with fresh parmesan and some coarsely ground black pepper if desired.
Here's another one but you'll have to work out the pts. You could cut out the butter, but thankfully, you don't have to with WW.
Herbed Salmon Fillets
Ingredients:
Salmon Fillets (4-6)
¼ C Lemon Juice
2 Tbsp. Butter, melted
2 tsp. Marjoram Leaves
2 tsp. Onion Salt
½ tsp. Pepper
Lemon Wedges
Directions:
Heat oven to Broil. Prepare a broiler pan with foil and spray with Pam Cooking Spray.
Mix lemon juice, butter, marjoram, onion salt, and pepper in a small bowl.
Arrange salmon on on pan and brush with mixture.
Broil for 10-20 minutes, checking occasionally with a fork for “flaking”.
Serve with slices of lemon.
