"The Usborne Internet Linked Library of Science: Human Body" by Kirsten Rogers. While it's geared for 4-8 grades, if you're using it as a spine and filling in with age appropriate other materials for each child, this is a nice one:
- it covers all the body systems
- it's laid out in a series of 2-page spreads that are easily read in one sitting
- it includes lots of internet links to cool related websites
- it's heavily illustrated with lots of actual photos and some color drawings

I like Blood and Guts (http://www.amazon.com/Brown-Paper-School-book-Blood/dp/0316034436/ref=pd_bbs_sr_1?ie=UTF8&s=books&qid=1213648081&sr=8-1) - and I am planning to use it again with my 5th and 3rd graders for Health this year.
