I'd like to start making my own baked beans (must be frugal!). Dh and I and dd really like them. Any good, simple recipes out there for baked beans? We don't eat pork products so no bacon or pork, please!

I am hoping you get some good recipes, especially from somebody in the south. :) The baked beans I ate when I lived in Memphis were 50 times better than what they make in Ohio!

Basic Baked Beans
from More-with-Less Cookbook

Soak overnight or by quick method:
1 lb. navy beans
2 qts. water
In same liquid, bring beans to boil and simmer until tender, about 1.5 hrs. Drain, reserving liquid. Preheat over to 275 - 300 degrees. Combine in 2 qt. casserole.
cooked beans
1/2 c. molasses
1/4 c. ketchup (optional)
1 t. mustard
2 t. salt
1/4 t. pepper
1 onion, chopped
2 slices bacon, chopped or 1/4 lb. salt pork (optional)
bean liquid to cover
Bake 4-8 hrs., adding liquid occas. if necessary. Cover during first half of baking time then uncover.
Option - substitute soybeans or a combo of bean varieties. Add 2-3 t. chili pwd. if desired.

Now baking for 4 hours is a lot of energy, taking up frugal savings. I wonder if these could be made in the crock pot.

Let me know if you make these and how they turn out. I haven't tried them but was wanting to.
