They sound delish. I've heard they also go by No Bake Cr@ck (http://www.cooks.com/rec/view/0,1910,156160-225196,00.html) :eek: -- so maybe I'm doing myself a disservice by even exploring these. But, I was wondering if anyone has ever tried substituting coconut oil for the butter so that they could be non-dairy?

Well, I made them with actual coconut once, so I don't see why not.

Oh, phew. No Bake Crack just doesn't have a pretty ring to it. It puts me in mind of No Butt Crack which is highly appealing, or unappealing, depending on which way you look at it.

I even went over to the old board and tried to answer your question about the loud neighbors, but when I tried to post it, it bounced.
Here's the answer I wrote for you:
I hope that you'll be able to get to the new boards soon. Anyway, I just wanted to reply to you because normally you'd have gotten about a million replies by now.
I like the plate of cookies idea. Maybe just stop by, all friendly-like, and mention how much you like living there, the only drawback being the thin walls. Mention that you can hear everything through those cheap things, and "If you ever hear the kids fighting or yelling or playing too loudly or whatever, please do knock on our door and let us know that we're disturbing you."
Now I know that you wouldn't be so inconsiderate as that, but if you kind of put the blame on yourself they might respond by saying "Oh yeah, thanks. Same here." Then you're all set!
Oh, and yes, go ahead and try coconut oil. I often sub it for butter, although we don't have any dairy issues here. I used it in brownies and they tasted like Mounds!

Okay, we tried making these today. I used rice milk instead of the regular milk, and coconut oil for the butter. I have to say, I'm not terribly thrilled. They are rather sticky -- which I think is a product of the coconut oil. And, I feel like I'm trying to mask Metamucil (sp?) with chocolate. Dang, those oats are chewy!! My colon is going to love me! :p
Anyway, they definitely do it for the chocolate & sugar fix. But, they as a cookie-thing, they don't really DO IT for me.

Ok, so coconut oil isn't solid at room temp? Is there anything you use for oil that's solid at room temp?
Also, if you search, someone mentioned making them without peanut butter and boiling them to a soft ball stage. This might compensate for the lack of solidifying oil.
If you could try them with butter someday, people will be looking at you funny and saying, "I'll have what she's having."

MY coconut oil is pretty solid at our current room temperature. Certainly as solid as any butter I might have out on the counter. So, I think it's not so much about the solidity as it is about the butter fat. I'm not much of a confectioner, but these seem closer to candy than they do to cookie to me. I think the fat contect -- even though coconut oil is completely and totally saturated fat, is it not? -- is what has changed the consistency. Maybe?

Maybe. And yes, it's more like oatmeal candy, really. It's supposed to resemble a fudge texture when it's done, thus the soft-ball stage cooking for the no-peanut butter version.

Also, the butter is part solid, and the CO really is oil.
Did you run the oats through the blender first?
I wonder if you could heat the whole thing in a pot and nurse it back to health? Does that sound crazy?

Nothing on my recipe hinted at a blender! Makes sense, but it's too late, now. After being refrigerated, they're not quite so sticky. We enjoyed some with dinner. It won't be total waste. And, there's that colon perk. :eek:
I just think I really prefer full dairy and wehat-melted semi-sweet chocolate chip cookies! Yumm!

Yep, that's exactly it. I only have regular oats on hand, so the first time I made them I put them in without blending and they were beyond chewy. Still tasty, but chewychewychewy. Next time I pulverized them a bit and they were a lot better.

I absolutely have to start making my kids things to eat for when we go places, so I tried this just the other day!
I used a blend of coconut oil/ Earth Balance for the butter. I would have used all coconut oil, but I ran out. I *know* this will work.
I used rice milk in place of the milk. I used Arrowhead mills organic peanut butter, and regular WHOLE oats (a bit more texture, but that's fine by us)! I used Hershey's dark cocoa, because I was out of the good stuff (Green and Black's organic cocoa). I think it needed a tad bit of sea salt, though. I used the same amounts called for in my original recipe.

I was planning on making another batch of these now that I have more coconut oil. I have a feeling I will like them this way.
Maybe you should try the Earth Balance.
Also, did you cook them long enough?

The recipe I used from Cooks.com (http://www.cooks.com/rec/view/0,1910,156160-225196,00.html) didn't say ANYTHING ATOLL!! about quick oats. Just oats. Three cups of them suckers. And, yep, anj - - chewy is an understatement. Hence all my colon references.
So, maybe I will try them again sometime with quick or blended oats.

The point is that the oats actually COOK when you stir them in. Instant oats or minute oats is what you need.
