I know that summer isn't really soup weather, but I have been having "dinner/cooking/time" issues and would really like to make a pot of soup at the beginning of the week and just eat it several times when we are crunched for time. anyone have any favorites to share?

I've got a quick and easy veggie soup that uses canned veggies. I don't measure anything when I make it so...
Brown about a pound of ground beef with some chopped onion and celery in a soup pot.
If you want to have potatoes in your soup peel and dice about two.
If you want carrots, peel and slice a couple
Add these veggies and about four cups of water to the browned meat
Slowly boil until the potatoes and carrots are almost tender
Add a can of green beans, a can of tomato sauce, a can of peas, a half a can of corn, a can of other veggies if you want.
Season with salt and pepper. Maybe a little Italian seasoning if you are feeling a bit minestrone-ish.
I've used kidney beans in stead of peas, I've added canned or fresh sliced mushrooms. Fresh minced garlic is good to add.
Other things that can be added are chopped cabbage, diced beets, okra, winter and/or summer squash.
Just remember the more you add the more it will grow. I have out grown my smaller pot a time or two and had to get the stock pot in use.
One I love to make is called Moroccan Lentil Soup.
Take a bag of dried Minestroni Soup from Knorr or other company. Add the water and 3/4 cup red french lentils. Add 1 clove crushed garlic, 2 teaspoons cumin and bring to a boil. After it is done add one can chick peas simmer 10 mins and garnish with cilantro or parsley. This makes a great thick soup you can water down. I also add pieces of potato and canned tomato and lots of other leftover veggies. It has a pleasant taste and has alot of Vit A and fiber.
