Vidalia onion season--recipes for onion lovers?

Hi folks,

Our dinner tonight included baked onion rings. (Recipe concept (http://jas.familyfun.go.com/recipefinder/display?id=40965) from an old Family Fun magazine.)

We love pissaladiere (pizza made with a thick layer of carmelized onions--no tomato sauce). French onion soup is great, too.

Other favorite onion recipes? My 16 year old son's favorite vegetable is the onion. And I would like to take advantage of the Vidalias that are now on sale.

Your ideas are most appreciated.

I refer to this dip as "Cholesterol on a Cracker", but it's great.

Mix 2 c of chopped vidalia onions, 2 c. shredded swiss cheese, and 2 c. mayonnaise. Place in ovenproof dish and bake until bubbly.

It is completely addictive. You can reheat small amounts in the microwave when you're feeling low on fat grams for the day.

During the warm months, we love grilled hamburger steak with sauteed onions. I carmelized the onions with butter, salt, and worchestshire. YUM:)
