Ok, I am cooking for 30 people for a Cinco de Mayo dinner. :) It is going to be buffet-style, and for part of the entree portion, I a going to set up a "build your own taco" bar with shells, meats, and fixins....what fixins should I put out? I have down tomatoes, cheese, lettuce, sour cream, olives, salsa...but what else could I put out? We are pretty simple eaters in my family, so I don't know what other people might eat. :bigear:

Black beans, pinto beans, guacamole. Possibly several different kinds of salsa, like hot, mild, and corn salsa.

I like to put fajita-style stuff on my tacos--carmalized onions and roasted red peppers (either from the jar or cooked with the onions). Also, fresh cilantro chopped and placed in a bowl so you can sprinkle it on top. It really gives that "authentic" flavor, IMO.

Sounds like the food will be delicious! We are going to a "spring fling" at someone's house on the 10th--I hope they're serving the same thing you are. :tongue_smilie:

WOW. Thanks for the help so far! Great ideas, all of them! My kids would be SHOCKED to know that something goes on tacos besides meat and chicken!!!!:lol:

Fresh cilantro, chopped fine. Cilantro is wonderful in Mexican food!
