Lots of folks have commented on either starting or expanding their vegetable garden in response to increased gas/grocery prices.
I'm curious what everyone will be growing this summer. We're in MN where the last of the snow is still hanging on, so right now we're still in the planning stages.

This year I am trying to grow only what we eat normally but more of it. I like growing beets but I am the only one who will eat them. I have in the past grown more root vegetables but the mice eat the tops of them.

We are in WI and had a little bit of snow just this morning.
I'm focusing on things we eat a lot of and things that can be frozen or canned (a first for me!).
Planning on green and red bell peppers, tomatoes, crookneck squash, green beans, peas, herbs (in containers) and chili peppers (in containers).
I figure we can't eat or store enough pumpkins, potatoes, onions, corn and winter squash to make them worthwhile (plus we don't have the space for corn).

I am still new to the whole gardening thing. I can't tell you what we're growing (besides weeds and cucumber beetles) but I can tell you what I am planting:
I started this past week with spinach, lettuce, broccoli, cauliflower, beets, carrots and turnips. Around mid-May I will add corn, squash & melons, tomatoes, peas, cucumbers, sweet peppers, eggplant, a few jalapenos and cilantro for fresh salsa ;) dill for pickles, and a few other herbs, and beans: green, black and kidney. I also have garlic growing which was planted last fall.
I am also planting 4 blueberry bushes and an apple tree this year, but I will not see yield from them for 2 - 3 years.
I like the idea of harvesting a balanced diet from my own garden, even if it won't last long. My goal this year is to maximize my limited space. For example, I have lettuce and spinach and root vegetables planted among other crops because they will be harvested just as the others are beginning to grow.
At least that is the plan... we will see how successful I am. :tongue_smilie:

We need a few more things but I am not sure what they will be. Maybe peppers and lettuce or cucumbers.

We've got peas (arriving shortly!), bolted collards, not gonna make it in time brussel sprouts (but soooo close and I am so sad), and newly planted tomatoes from last year's seeds.

We are in the prime of the early vegetable season. We grow our own veggies for canning, freezing, and eating. For my spring garden I have planted:
Annuals:
peas
onions
shallots
garlic
broccoli
cauliflower
cabbage
lettuce
spinach
radishes
swiss chard
perennials:
Asparagus
rhubarb
strawberries.
many herbs and flowers
I will start putting beets out in another week or two and then after May 15th, I will be planting tomatoes, beans, green and limas, peppers, eggplant, cukes, squash, pumpkins, and melons. This is a light year for me as I am due in August. We plan on only planting enough for eating and some light canning and freezing.

Sounds like a great plan! Have you read the book Carrots Love Tomatoes? It is all about companion gardening. I highly recommend it!

I only have 1/2 acre, and the kids have to play somewhere so I need to use the space I have as efficiently as possible.

I always plant a small garden. I don't think the veggie garden saves that much money once you factor in everything needed, so I do it more for the pleasure of doing it rather than any hike at the grocery store. I have:
4 different varieties of heiroom tomatoes
2 regular tomato plants
lemon cucumbers
beets
swiss chard
carrots
pumpkins
watermelons
I also have an apple tree, blueberry and blackberry bushes, but the birds and rabbits usually eat most of the berries.:glare:

I have:
potatoes, peas, onions, red beets, carrots, lettuce and broccoli so far, along with rhubarb
I will be adding:
green beans, tomatoes(lots), green pepper, melons, zucchini, sweet potatoes, corn, and I may try some popcorn this year
I keep our potatoes in our basement, and they stayed just fine until just the last month. And now I'm planting them. As long as your basement stays fairly cool, they will keep.

Unfortunately not everything we planted is coming up. Some seeds did not sprout. So far, we have tomatoes, cukes, beans, watermelon, canteloupe and fennel.
Carrots were a failure ( I think it's our soil since it certainly could not be US?!)

Well, we moved this month, so I couldn't really start a garden in time.
However, in the side yard there is a small strip of garden, surrounded by areas of rocks. In both the garden area, and all throughout the rocks, tomato plants are growing like crazy.
There are at least two different varieties of tomatoes, though I don't know what either are. I don't have cages, so the sprawling ones are just falling over to sprawl onto the rocks.
I think I've also got garlic growing in there.
It's obvious that no one planted these tomatoes. They must have re-seeded themselves from a previous planting.
Fun!
If I can find some broccoli and pumpkin starts, I'll plant those. Maybe some lettuce? What else is good to plant in August?

So far this year: A bunch of different lettuces, tomatoes (which are doing great), jalapeρos (which didn't do so well), zucchini, eggplant, green beans, pumpkins (which didn't make it), mint, oregano, thyme, chives, and rosemary. Also blueberries and strawberries, but the backyard critters cleaned them off before we got to harvest them. I just picked two pounds of green beans yesterday! Oh yum.
Next on my list is carrots, beets, and swiss chard, and I may try the pumpkins again. This is only my second year gardening....it's quite a learning curve, isn't it??

we have winter at the moment. we have our winter garden planted, and are starting seedlings in the greenhouse for spring.
we have cauliflower. cabbage both red and green, broccoli, carrots, onions, lettuce, spring onions, rhubarb, snow peas, green peas, still digging up sweet potato from last summer, and radishes.
in the greenhouse we have potatoes, capsicum, green beans snow peas, and tomatoes, and sweet potatoes starting in pots.

I mainly grow herbs because although i get very passionate about gardening at times, i am not so good at consistency ( I notice i seem to be saying that a lot lately, must be trying to tell myself something :) ) and herbs seem to be able to handle my sporadic neglect much longer than vegetables.
However i did just pick some beets I planted many months ago. I have lettuce as well, and strawberries.

I used to have big veggies gardens, but for the past 12 years we have lived here..and just do flowers. Occasiionally we stick a tomato plant in between the lillies and the roses, but not this year.

Ugh. In my garden? Rabbits and squirrels, unfortunately.
I had planted green beans, a couple varieties of lettuce and cilantro. They ate all the beans. I do have some lettuce that survived and we've been using the cilantro all summer!

Two tomato plants, one basil plant, one parsley plant, one oregano plant.
Dh used the weed wacker to take out my chives and my zucchini.
He also used roundup to take out the flowers I planted in front of the picket fence. So the flowers go halfway down the fence and then the rest is just bare dirt. He just does this. One year he used the weed wacker to take out a flowering vine the neighbors planted on the fence on our property line, the fence that THEY paid for and installed. I was so embarrassed.

Here too, we had to put a fence around everything this year. As last year they ate up all my radishes, lettuce, collard greens, etc....ugh

Weeds. Seriously, we just didn't get the garden done this year. We did have lettuce in the spring, but that's about it. Oh, and one box is just strawberries and they did well in the spring. I also have herbs in a planter, not in the garden.
We usually have peas, lettuce, tomatoes, cucumbers, sweet potatoes, onions, peppers, spinach and a few other things but I can't remember what. The garden is dh's baby - I just cook whatever grows. We tried squash and corn a few years, but it didn't do well here.

I always grow lots of tomatoes; and lots of herbs, zucchini, and green peppers. But this year I wanted to try Tomatillos. They are the small, green, tomato-like fruit that salsa verde is made out of. Okay; I grew them-they are big enough, they took over my garden to the detriment of my real tomatoes and now when I try to prepare them for salsa- I have an anaphylactic reaction. The steam from boiling them with the husks on or off causes my throat to kind of close up. I have pounds of pods-and need to prepare them-does anyone have any suggestions? I read that I could roast them-but then, I'd have to stand over them. I can eat salsa verde-it's my favorite. What would you recommend? Should I just donate all these to my favorite Mexican restaurant and go back to yellow crook-necks for next year? Thank you!
