View Full Version : Favorite Potato Salad Recipe?

I've got a lot of potatoes, both reds and russet. I have never made potato salad, and would like to try. Any special tips on how to prep the potatoes so I don't end up with mush, or undercooked chunks?

What about a favorite recipe? How do I do this?

I really dislike potato salad that you buy in the store and will not even eat it. But this version is SO simple and so absolutely delicious. But, it's not an exact science. You can vary it to suit your taste.

Ingredients
4 pounds baking potatoes (8 large)
3 hard-cooked eggs, grated
1 cup mayonnaise
1 tablespoon spicy brown mustard
1 1/2 teaspoons salt
3/4 teaspoon pepper


Preparation
Cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool. Peel potatoes, and cut into 1-inch cubes.
Stir together potato and egg.

Stir together mayonnaise and next 3 ingredients; gently stir into potato mixture. We like it best at room temperature, but you can put it in the fridge if you need to.

Yield
8 to 10 servings
