I need mozzarella help.

The first time I tried to make it, the cheese got grainy and tough instead of elastic. I used the microwave, and that may be the problem. I wouldn't mind trying hot water this time.

It's Saturday morning, and I've got a fridge full of milk. Can anyone help me make a fantastic cheese?

Did you knead it enough? I think kneading is the key to a shiny cheese. Or maybe your salt didn't disolve completely?

I wish I could help more. I am a beginning cheese maker, so I'm not much help.
