OK, it's that time of day again, and I desperately need inspiration. What's on the menu in YOUR house tonight?

This will either inspire me, or overwhelm me! Regardless, let me have it! I'm interested!

nothing inspiring here, lol, just crockpot meatballs and spaghetti! but oh so yummy on a cold night.

Not really a recipe, but at the grocery store this morning I stocked up on all sorts of hearty veggies-- beets, bok choy, collard greens, etc. My plan is to throw the greens into a big pot with a bit of oil, and add some nuts, steam the beets, and serve over brown rice. Now what can I call it-- January Stew? hmmmm. And for dessert, clementines and rougalach. Then we'll watch a Cold War video from our history studies, either Fail Safe or Dr. Strangelove... that's tonight's plan!

and I *will* be good mommy and make it because I already stopped at the store for cheese.

Salmon fillets in some form (probably balsamic glazed or something), regular and sweet potato oven fries, and eda mame--aka the only green thing my DD5 will put in her mouth anymore.

Homemade chicken noodle soup with homemade bread on the side. I do cheat and use the bread machine. So even though it's technically homemade it really on takes me 15 minutes prep time. Shhh! Plus I get the added benefit of "homemade" brownie points.

Garlic Lime salmon
This is like the recipe my family LOVES from Saving Dinner:

GRILLED SALMON WITH LIME - GARLIC
BUTTER

4 med. clove garlic, crushed
1/2 c. butter
1/2 c. lime juice
1/4 tsp. pepper
1/4 tsp. hot pepper sauce
1 tsp. salt or to taste
6 salmon steaks

Brown garlic in butter until lightly browned. Combine with lime juice, pepper, hot pepper juice, and salt. Brush salmon with mixture. Broil or barbecue salmon about five minute per inch of thickness on each side. Turn once and brush with garlic butter halfway through cooking time. Heat remaining garlic butter and drizzle over salmon. Six servings.

Grilled salmon, asparagus, salad, fresh rolls, mac and cheese. Fruit salad for dessert. Oh - and, of course, wine!!

Since I have no pots or pans or dishes, I bought a frozen lasagna that can cook in the oven and will eat off disposable plates with plastic forks. :)

so I have a bottom chuck roast covered with onion soup mix and a can of cream of mushroom soup - all wrapped up in foil and cooking in the oven for 4 hours.

I will be making some mashed potatoes, orange glazed carrots and a spinach salad.

With the no-cook Barilla pasta sheets, cooked Italian sausage, etc. I make a BIG pan and it lasts at least a couple days (since not everyone here eats it.)

May create a dessert, too - or maybe not. We shall see.

How about homemade soup with cornbread and butter! Or maybe chicken with mashed potatoes and gravy, green beans, and biscuits! Can you tell I'm from the south?

Well it was going to be tacos but once again I forgot that it takes a hundred years for meat to defrost up here. I think it may be a pizza night for us too.

Have boiled two chickens today -
one recipe is chicken and dumplings for dinner tonight

and the other is enchiladas but I think I'd have enough for a chicken pot pie.
Love to hear how you do your sauce and veggies for the pie part.
I think I'll try biscuits on top?

I've also made a carrot cake. It's cooling and I'm getting ready to make the cream cheese icing.

Please don't feel overwhelmed. I served pigs in a blanket and canned pineapple the other night.

OK, well, since the family just informed me that they ALL want to eat dinner in 25 minutes, I guess the next question is.....who's going to invite us all over for dinner!!!!

I'm so impressed by all of you ladies! And btw, bread in the bread machine TOTALLY counts as homemade bread in my house. I did that earlier this week and was QUITE proud of myself.

Hmmm....can waffles count for supper? If they're homemade and not Eggos?

Pizza from our favorite local pizza place with a large antipasto salad. Sorry for not inspiring you with anything "wow!" but our church blessed us with meals everyday this week so we can focus on our oldest son and other children, plus my pregnancy. Surprisingly enough, everyone made the same thing every night. I will say that we will not be having meatloaf and mashed potatoes for a while. :)

pizza night. it is our reward for the week plus it is 1 night out of the week where i don't have to think about dinner. we have not gotten sick of it yet. we ususally go to 4 different pizza places or have it delivered.:D

Here's what I ended up making, and I thought my DH was going to knock me down and kiss me. Even the toddler ate it (though DD5 would only eat a piece of plain cod with EVOO and salt).

LOL! Pancakes are a regular around here, especially when I've forgotten to thaw something. I ALWAYS have flour and eggs in the house!

I heated up frozen chicken fajita strips, heated a can of refried beans in the microwave (I removed then from the can first, LOL), made some "mexican rice"(in my rice cooker I put 3 cups white rice, 4 cups water and about 1/2 cup salsa), and now dh is gone to the mini-mart to buy some more tortilla chips so we can make nachos to go with it all. :-)

LEFTOVERS!!!!

After my husband pointed out just how much of the chicken and beef tips were left over in the fridge from earlier this week, I realized he was right - we really had to have leftovers tonight. So I made some mashed potatoes and a salad to spruce 'em up, and somehow - almost everyone was happy.

Tomorrow night - waffles 'n sausage!

I really had fun reading what everyone else was having, and I got some great ideas for next week!
