It was very good - although I'm the only one of my family who thought so. I think my kids would have like it better without the cilantro, the ginger or the garlic in the dressing. But what do they know? :001_rolleyes:

Anyway, the salad is HUGE. I mean seriously, it made a LOT. I had to go get my bread bowl to use because all of my other bowls were too small. Even my large salad bowl was too small! It made such a large amount, that after 4 of us had had our share, it didn't even look like a dent had been made in it.

What in the world can I do with all this salad? I did NOT pour the dressing over the entire salad. I spooned it over our individual portions, so that should eliminate the salad getting soggy. But honestly, you ladies have creative, excellent ideas. What can I do with this salad? Not even my neighbors could eat all of this!

In case you don't know, this is the salad (http://thepioneerwoman.com/cooking/2008/03/my_most_favorite_salad_ever_ever_ever_ever/) I'm referring to. Finally Ree put something on her cooking blog that wouldn't clog my family's arteries, LOL! My hips just expanded by looking at her other recipes. No way would I dare try them :ack2:. But this one, I could definitely do.

So help with what to do with the leftovers?

I have wanted to make that salad!! It sounds good. Maybe for a church potluck! I haven't tried anything of hers that I don't like. I don't know what to tell you, other than eat a lot of salad for the next 2 or 3 days?

My dh would make it into a wrap! Or put it inside a pita bread and eat with soup. YUM!
