Soft white for muffins & pastries and such...

and hard white for breads.

I LOVE soft wheat berries for pancakes. :D It makes them light and fluffy compared to straight hard red or hard white.

Soooo, what else did you get? :D

I ordered an insane amount of wheat incase of continued shortage LOL. I got hard red winter and soft white winter. I also bought nutritional yeast, regular yeast, steel cut oats, regular oats, whole wheat pizza crust( anyone have a recipe for wheat crust?), brown rice and seitan.

I normally oder through Country Life which has a co-op in my area, but they are out of wheat. I placed this order through Morningside Organics, which also has a co-op in my area and they do have some wheat so I am stocking up!

I'm not Jean, but I store mine in 45 pound pails. This will be my third year of ordering grain in bulk, so I have quite a few pails. In fact, this year I'll buy all of my grain in bags and transfer it from bags to buckets (it's cheaper this way, and now I have plenty of buckets, so it's no problem.)

I close them up with Gamma Seals (http://www.freckleface.com/shopsite_sc/store/html/gammaseals.html) (easier than prying open the standard lids) and stick oxygen packets inside. My grain stays fresh all year.

My family likes it much better than wheat. My middle son can't eat wheat so we tried it, and we all think the flavor is much better.

I store them in 5 gallon buckets and gamma seals also. I have them stacked in a corner beside a freezer of my ugly kitchen LOL.

Kamut grain.I have heard of this but never tried it. I will have to order a small bag next time and see if it's something we would like.

Yes, the grains do stay fresher before being ground. Once wheat berries are ground, the flour oxidizes (turns rancid) at a very fast rate, so you lose a lot of the nutrients.

These are the oxygen absorbing packets (http://waltonfeed.com/oxy.html). They keep the grains fresher while they're being stored.
