I call it breakfast for dinner. We've been doing this because we've had so many eggs to use up. Dh gets them from a guy at work and they have had a ton. Consequently, dh has been bringing them home. At one point, we had 9 dozen eggs in the refrigerator. My kids love it.
The last one I did, I cooked up some chicken sausage (you could use the tofu kind) with some onion and garlic. Then, I put together the eggs, leftover greens (probably it was kale), sauteed red and green peppers, along with the sausage mix. I also had some leftover challah and added it. Cooked at 350 or 400 until it was done. We ate with a leafy green salad. Instead of the challah, you could add cooked regular or sweet potatoes.

Those look fabulous! How did they turn out? What did you use to cook the fritata?

Cast iron for everything. (Obvious problem with placing your your skillet under the broiler if it has a plastic handle!)
Last night I roasted sweet potatoes with turnips. Now turnips are not the usual thing that I buy but they came in my CSA box. I know that I don't like the texture of boiled turnips, but roasted ones (olive oil, Vege-Sal, snippets of fresh rosemary) were not bad.
