My sons birthday is next week and I want to make him a special cake. He likes just about any flavor.

Anyone have a great recipe?

This is my choice each year... And the kids have started requesting it for their birthday cakes, too! (It's FABULOUS!!!)

Mock German Chocolate Cake

1 box white cake mix
1 box instant chocolate pudding mix
2 cups milk
2 eggs

Preheat oven to 350 degrees. Mix ingredients with beater until there are no white chunks of cake mix left. Pour into a greased 9 x 13” pan. Bake according to box (30-35 minutes probably… put a toothpick in the center of the cake when you think it’s done and if it comes out clean, cake is done, if there’s batter on it, cake needs more time baking).

Rich Yellow Pudding (frosting)

6 egg yolks
1 pint (2 cups) half and half or cream
1 stick butter
2 cups sugar

Blend the egg yolks in the blender. Add half and half and blend. In a large (6 quart) pot, melt butter. Stir in sugar. Add the eggs and half and half to the ingredients in the pot. Stir well with wire whisk. Cook until the mixture thickens (about 12 minutes). (If it begins to boil, you can stop. It won’t get thicker.) Add 2 teaspoons of vanilla. Allow pudding to cool.

For frosting: Use half a batch or more for a 9x13 inch cake. Take half of the pudding and stir in 1 cup of coconut and ½ -1 cup of chopped pecans.

(Or since some don’t like coconut, use just one fourth of the pudding and stir in ½ cup coconut and ¼-1/2 cup chopped pecans and spread on only half of the cake, using plain pudding for the rest of the cake.)

Chill in the refrigerator.

You're welcome! You might guess that it's written for kids and husbands to make themselves:o) I've tweaked the directions little by little to avoid chunks of cooked eggs in the pudding, etc. Years ago, I'd make the pudding and they'd make only the cake. Now I don't have to do a thing. What a treat to have big girls!

I hope you like it as much as we do!
